What are your favorite laid back, cozy adventure games?

I like Mystic Quest despite it's shortcomings.
Also, I think Pokemon Gen 1 and 2 really nail this feeling.

Right now I'll answer Final Fantasy VII. It has the right amount of everything for a comfy playthrough.

After Chrono Trigger, this was the only RPG I liked (only finished it once though)
Guess I just like visible enemies on the map, hate random encounters in other RPGs

Nothing will ever beat OoT for me. LttP is a close second though. Magic Knight Rayearth is up there too but I've only played it once.

The Knight Gundam RPGs are all fine, mechanically sound Dragon Quest clones, but I think 2 on the Famicom might be the best out of all of them. Massive technical improvement on the first game, really nice graphics and streamlines a lot of things. You won't ever have to sit about grinding levels either because progress is so brisk.
