It's polished but the level design and bosses are really underwhelming and the game is way too easy unless you specifically go out of your way to handicap yourself.

You're not crazy, just a faggot with bad taste in games. Not using sub weapons isn't "going out of your way to handicap yourself," any more than not using the sELECt glitch in MM1 is. Weaknesses affecting boss patterns is a thing in most of the X series because it's an intuitive way of showing new players which weapon a boss is weak against without having to count whether it goes down by 2 or 3 every time they get hit. Doing bosses buster only is less of a limitation than shit like pistol starting in a game like doom, especially since you're forced to fight at least one boss buster only no matter what.

You can stunlock a few bosses with their weaknesses in X. Penguin, Chameleon, can all be stunlocked Mandrill and Armadillo and Kuwanger can be cheesed super easy.

To be fair, I really like the dual challenge Megaman gives. You can try and exploit weaknesses as a strategic move to make things easier or you can just try and overpower them with the regular buster. It gives the game some depth that you can approach it slow and methodical like a puzzle or just brute force things.

It's not like you just fucking die instantly if you use the wrong weapon... have you never played a Mega Man game before?

You use all your weapons you got equipped with to see which is the one the current boss is weak against. The final boss of Mega Man 2 can really only be damaged by the usually weak and slow-moving bubble attack, for example.

The whole fun of Mega Man games is that Mega Man himself is weak. Then you start beating bosses and getting new abilities, getting slowly more powerful and versatile with weapons with different utilities, power and firing angles. They made a mistake (that they corrected with 9 and 10) when they added a charge shot. The X series as a whole is this mistake taken up to 11. You can become way too powerful to the point where in some games you can just air dash over most enemies while charging your screen clearing charge shot for the enemies you can't skip, saving the boss weapons, the main gimmick of the series, as just something you use against the other bosses for their weaknesses. Then when they made a harder game (X6) it was mostly badly designed bullshit.

What is up with this mindset? Game/difficulty design is about putting the player into difficult situations. If you can cheese the game, it's not your fault for cheesing it; it's the developer's fault for letting you do that.

Weaknesses just add to the overall flexibility of Mega Man games, they're good to use on your first few playthroughs to get a feel for the game and proceed smoothly, and they're rewarding to find by yourself, but there's no denying they're basically a win button in most cases and you're missing on part of the experience by using them since you don't really get the full boss experience, you may not see all his attacks, learn his patterns, etc, you're also robbing yourself from the freedom that comes with the stage select feature by having to follow the weakness chain for the stage order.

But that's perfectly okay, because after beating the game several times to build enough confidence, you can always go back and challenge the game buster-only and random stage order, which is fun and rewarding in its own way, that's why Mega Man games are so replayable. I would probably have given up on the franchise as a 7yo shitter if not for the weakness system, but these days as an adult I hardly use them.

More so than old games themselves I miss the days of when this was the approach to playing them, now everything is about deconstructing the gameplay and demonstrating how to finish a game in the shortest time possible. An exploit is convenient here and there (such as if I have an actual real time need to get past something) but to do that for the entirety of a game is mind-numbing. I'm sure everyone would like their favourite games to all be perfectly balanced but ultimately the states in which they were released in were what made them as replayable as they are.
