As much as it makes me feel like a pleb, I have to say FF7 as well. It's not even my favorite FF, but it's such a comfy adventure with great aesthetics, lovable characters, and brilliant music. Getting to hear that overworld music and see the blue sky the first time you set foot out of Midgar is such a legendary moment.

This game teached me to git gud at videogames when I was only like 6 or 7 years old
It took me a lot of time to find all cages by myself as well (I think one cage in Hard Rocks and one cage in Pencil Pentathlon took me the most time to find)
Nowadays I just do a yearly 100% playthrough that ends in 3-4 hours because the game's not that hard to me so I get to enjoy its graphics, music and gameplay.

My vote goes to Final Fantasy Tactics. A very close runner up is R4: Ridge Racer Type 4. FFT is just so replayable, with strong characters and story elevated by the amazing soundtrack, I revisited the game quite a lot over the years. I hear there's a remake, well deserved too, so new generations can enjoy the game as well. I'm glad the art is preserved.

I did not grow up with a PS1 so now as an adult I've been emulating a bunch of its library and these are the stand outs that I really like:
