Where do I start with this series? Which games are good and which ones suck?

consider dracula X, it's disliked for being a knockoff of rondo that's a bit unbalanced but it's ok if you just want more castlevania.
castlevania 2 is an interesting curiousity but it's not usually recommended to play without caveats.

if you really want to dig deep there's the x68000 pc castlevania, the easiest way to play it is through the psx chronicles port, similar to dracula x, if you need more it's worth trying out.

i recently started sotn having only played super metroid in this genre. got the ps1 jap version with a translation patch and its pretty fun so far. i think i've done all i can before the inverted castle part, but its been a few days since i touched it

You could start pretty much anywhere. There's a division between ClassicVania and MetroidVania (like Bloodstained imitates), but there's very little which outright sucks.

That one Game Boy game starring Sonia Belmont (Legends? I forgot) is the only ClassicVania whicg I thought was outright just not good. People give Simon's Quest a hard time (and it's a rough and sloppy game that deserves criticism), but that one is still just a lot better.

If you want games similar to Bloodstained, then you should check out Symphony Of The Night, and then the GBA and DS Castlevanias.

I honestly like Dracula X a lot. For being a hacked down compromise version of Rondo, it does a pretty good job of that. Plays mostly like the NES games, but it has fantastic graphics and sound.

It made me like the Axe the most as a subweapon, that vertical reach and arc is critical for this game, especially against Dracula, and it made me more aware of its importance for the other games.

ive never played a 3D one but all the 2D ones are worth a spin
if you like old platformers try the NES ones
if the NES ones are too hard for you, you play 4
if you like the "vania"/exploration games try from SotN onward dont forget the GBA and DS games

ive recently been playing it and if it wasnt for the fact the save system absolutely shits all over you in the last 2/3 stages it would probably be more fondly remembered for the decently atmospheric horror game it is.
its good for halloween.

1 and 3 on NES(3 famicom has different music and is a little easier), Super Castlevania IV(affectionately known as super castlevania bros) for the SNES, Bloodlines for the Genesis, Rondo of Blood for the pce-cd(Japan only but there is a fan made translation patch or just use a translation guide from gamefaqs or whatever), and Symphony of the Night for playstation are the must plays if you like the series.

If you like those games try 2 for NES, II: Belmont's Revenge for the gameboy, Dracula X for the SNES, Vampire Killer for the MSX, and Castlevania Chronicles for PS1 which has a port of X68kvania which was a remake of CV1 and an updated version of it as well. I mean Vampire Killer and SCIV are kind of remakes as well but all of them are uniquely different games. I was going to put Rondo on this list as well but I think it's one of the best classicvania gameplay experiences despite not being one of the most fun games.

I heard the GBA games are good and more like SotN but I never played them. I don't like CV64 but it's worth trying out, Legacy of Darkness isn't a sequel to it but more of an updated version/directors cut kind of thing.

1 and 3 US are legitimately too hard to be fun
I see their difficulty compared to early Mega Man a lot and I strongly disagree
Even MM1 has consistent ways to restore health and selectable boss weapons means you’re never truly fucked
But CV1 and 3, you have maybe one chance to restore health in a stage other than beating the boss (and this health is hidden), and if you pick up the wrong sub weapon, you might as well game over because god help you trying to beat Death 1 without holy water, for example
Granted CV NES games are very short so you ideally would just learn from your mistakes and try again, but it’s ball busting

Depends on what you want out of a Castevania.
If you want a classic castlevania experience I'd say start out with either IV or X68000, both are really awesome.
I on nes is good if you can into it, III is brutally difficult so probably not a good one to start with; if you can get your hands on it Rondo is a lot of fun. Symphony is a good game in it's own right and is a must play, but it's not very "castlevania-y". Most similar to bloodstained however, so if you enjoyed it you'd love SOTN. Everything outside of above games is garbage.
tl;dr start with VI, X68000 or SOTN.

III is where I'd start because it's the installment most similar to the original but improves on its formula by greatly expanding variety and replayability. Get the Japanese version though, the NA version is for masochists.
