You could start pretty much anywhere. There's a division between ClassicVania and MetroidVania (like Bloodstained imitates), but there's very little which outright sucks.
That one Game Boy game starring Sonia Belmont (Legends? I forgot) is the only ClassicVania whicg I thought was outright just not good. People give Simon's Quest a hard time (and it's a rough and sloppy game that deserves criticism), but that one is still just a lot better.
If you want games similar to Bloodstained, then you should check out Symphony Of The Night, and then the GBA and DS Castlevanias.

I honestly like Dracula X a lot. For being a hacked down compromise version of Rondo, it does a pretty good job of that. Plays mostly like the NES games, but it has fantastic graphics and sound.
It made me like the Axe the most as a subweapon, that vertical reach and arc is critical for this game, especially against Dracula, and it made me more aware of its importance for the other games.
