I can think of two things right off the bat:
*1) Sex as thanks, especially if she thought the rescuer wanted that.
*2) Was in the loony bin for at least one good reason.

She has attachment issues and psychological trauma. When OP happens the romance hasn't even started since love or anything like that isn't even in her mind. Her idea was a one night stand just to feel good and that's it.
The romance is basically breaking though her shell and allowing herself to love someone. To help move through her trauma a bit (she's very much unhinged even by the end of ME2, since you can't change someone that fast).
