stellaris is by far the easiest paradox game. people say hoi4 is the easiest, but in my first run i lost against netherlands as nazi germany

That is because you are retarded. You can probably take out the netherlands with zero economy and army management just by putting the troops you have at the start of the game and drawing an attack arrow

Even worse, you could do it while the troops are training and have 0 org. The only feasible ways to lose to the Netherlands as Germany is if you let them win, or you are post-civil war Germany who attacked Netherlands over the kaiser not being returned and lost due to have no troops from the civil war.

Haven't played stellaris in over a year and a half, how much of the mechanics have been changed?

Reminds me of how my friend lost against Poland as Germany and complained about how the game doesn't explain anything and got very mad when I told him he should watch a YouTube tutorial and compared HOI4 to Dark Souls

I ragequitted stellaris after the major fuckup patch. I didn't even bother wait for the patch of the patch.
How is now? The abysmal planetary rework is still there?

Stellaris isn't just easy, it's boring. Bare bones, generic "discoveries"; meaningless random coloured lasers pretending to be a dynamic tech tree; exact same "end of the universe" calamity always requiring you to be the best at war.
I don't know any other games that try and pretend you can win without war but require war to win

I’d argue CK3 is the easiest, then Stellaris.
Hoi4 was the easiest on release but nowadays it really isn’t
