I know Doki has something like 10-11 full time employees as well as a few other part time people like her thumbnail maker who's been working with her since pre-selen and her website manager.
She's got a general manager to help with her schedules and making sure she's using her time wisely to actually get her work done, as well as an assistant or two. She's got a few agents to help her get general sponsorships from corpos, game companies, merch, etc. She has an asia team to help her get sponsorships and merch negotiated in Asia, which is how she got her Nendo and Goodsmile plush so quickly. Not to mention video editors, though those might be part time too.
In the end, she's still doing 95% of the work regarding streaming, collabs, and managing her projects/employees, but managers help a fuckton to keep her focused on actually making creative content, like how she recently headed a Horse Race Test mod project after getting in touch with the original game dev.
A smaller indie obviously won't have that much money or clout to throw around and hire people, but a general manager to help with scheduling and finding collabs/sponsors is absolutely helpful.
