Because the country began all smushed up along the East coast, the region we call "The South" refers specifically to the Southeast states.
For the same reason, the "mid" in "Midwest" is much further East than you would think, compared to looking at the "middle" of the map. It is named for the "middle of the west" when country was when it was half of the size it is today. That typically means from Ohio to the the stack of states north of Oklahoma. So "The Midwest" actually stops at the center of the country, and doesn't really go into the "West" at all.
Then there two smaller regions, the "Mountain West" and the "Southwest" whose states can vary a little bit depending who you talk to. Then, just to confuse foreigners, none of the three states on the West coast are included in "Mountain West", "Southwest", or "Midwest".
As for Texas, it sometimes is included in "The South" and sometimes in the "Southwest". However, Texas is so large that it doesn't fit perfectly in either, and so sometimes Texas left on its own, or is grouped into some other, less-common "Central South" region as in

But in NO ONE'S definition is Texas ever part of the "Midwest". If you go to the US and say "Texas is in in the Midwest" people will laugh at you and throw things.
