why does vtubing have such a structured system going on compared to streaming in general? Sure, some streamers are part of talent management organizations, but they're not nearly as uniformed, structured and goal-oriented as vtubing agencies.

I suppose it would be because vtubing was popularized by Japanese Vtubing, with all the structures and hierarchies that manifested.
Aside from that, the threshold to streaming is "get a camera and set up OBS" which is a much lower hurdle than getting an avatar designed, illustrated, and rigged. So you're less likely to have gonzo vtubers doing avant garde stuff since there was a bigger investment that is being risked

Simple.
Vtubing started in Japan and quickly became a corporate product that follows a japanese corporate structure.
It then spread worldwide but since people looked up to the JP vtubers that made it what it is, they followed their steps, thus making it overall a much more structured stream style.

Yeah, they could just quietly beat the game.. OR they could fail an easy jump 5 times to make a viral clip. Game Grumps was a good example of this.

Cuz for a long time vtubing was basically monetarily gatekept
In like 2017/2018 you needed a 3D model + 3D trackers. In 2019-2020 you needed a 2D model + an L2D rigger
So the the only way "into the club" so to speak, was to have the financial backing of a corporation
By the time Riggers became more commonplace and shit like Vtube studio made it easier for layman to get into vtubing, Nijisanji and Hololive had basically created an established duopoly
With normal streaming, it was much easier to get into since all you really needed was a computer, OBS and maybe a capture card

The illusion of providing esoteric functions is what vtuber agencies try to sell people on. It's a farce that only works in vtubing because of normalized carryover idol shit from JP.
It's the same reason why people hire professional trainers to get in shape and they make them squat on a balance ball while shoulder pressing 3lb dumbbells and doing wacky circuits
