according to developer commentary it's been created with a sort of "singleplayer multiplayer" in mind. at any given moment when you look around at your teammates you see all them playing out their role to best of their capabilities but they barely actually mesh with their teammates.
they used to have more purposes for the roles such as demoman needed to place a charge to open pathways but they removed those sorts of duties because they noticed it became a chore that someone has to do and paradoxically more specialty like that made things less fun. even medic as necessary as it may seem is not a hard requirement and any sort of ragtag lineup can create fun skirmish matches.

Much easier simply as a matter if how it works, as it is a Metroidvania with drops and xp leveling system (like most of the castlevania side and styles of metroidvanias it inspired). Because of that you can always grind levels or drops if you have trouble instead of needing to seek out upgrades like the more metroid style metroidvanias or get better at the game. If you die you load back at the most recent save room to try again instead of worrying about limited lives and continues.
However, even among metroidvanias SOTN is on the easier side. The game quickly provides ample items and armor and weapons and abilities that make the game easier so the difficulty slopes downhill from the start of the game.

I don't blame SoTN because it was trying something new, and there is a market for people that like things like it so not surprising easyish similar ones like Bloodstained Curse of the Moon get made as well. Interestingly the big video game style inspiration for SoTN was Zelda, not Metroid though.
There are more challenging ones but they tend to be more on the Metroid side where you are gated by upgrades and skill rather than levels upgrades and skill (not that metroids are hard themselves). I don't know em all but I'm sure they are out there. Cave Story is retro indie metroidvaniaish game that has challenging sections especially the real ending. Hollowknight is mainstream, especially at the moment with silk song out, but it too falls into that aspect because the platforming and combat can get very tricky by the end and although it doesn't have a limited lives system it does do some dark souls mimicry where if you die you need to get your shit back and or lose it and are weakened until you do.

There is something to be said from a business perspective for accessibility as well. If you don't have trouble you don't need to take advantage of more powerful tools or hunt them down. I think one of the GBA metroids even accounts for low % completion as well, giving a different ending if your item collection % was very low as a positive rather than negative. However the stuff is still out there for players that need them and to reward their exploration.
