Anycolor makes more money AND returns more money. Just looking at the last report:
Revenue (total sales):
- Anycolor: 15.8 billion yen
- Cover Corp: 9.6 billion yen

Net income (profit after everything is paid):
- Anycolor: 4.9B
- Cover: 0.7B

Profit margin (how much of sales becomes profit):
- Anycolor: 31%
- Cover: 7%

How much of that money goes back to investors?
- Anycolor: 35 yen/share
- Cover: 0 (they reinvest all their money)
So every 100 yens you invest on Anycolor you get back 1.1 yen/year.
Most investors in the market care more about short term revenue and for that Anycolor is better.
That doesn't mean it is the better company, if you think in 10 years Hololive will still exist then there's a clear advantage for the price (in 10 years). Investment will start to return (things like the studio).
Meanwhile if Anycolor stops paying investors or growth at any time the price will go down hard (hence why Doki's incident caused fear and the stocks went down hard).

Simple, Nijisanji moves to acquire new market segments and it's surprisingly effective. Idios unexpectedly became the most successful niji female unit in years with a really easy marketing/targeting approach (fruits zipper), enough to get some male fans in a post-holo environment. Heroes' fanbase is a previously untapped pool of new young female adults with high purchasing power. Lunlun was a hit with kids and the yumekawa crowd, and they responded with a marketing campaign in Ciao and going aggressive with the nui/pape accessory lines. Volta and 3SKM has their own target bases which they perform well in.

I'm not sure cover is capable of deviating from their one size fits all idol agenda. Gamers was an early attempt at something different and regloss ended up being more of the same but with different branding.
HoloEN was also the same, multiple talents have said how early on it was more casual and entertainment focused - they weren't in the idol pipeline so ended up doing it themselves with smol myth but eventually the focus changed and they were forced to follow the same path as JP and those that couldn't take it left.
Cover is laser focused on one particular thing which means that they can't be flexible like anycolor and throw random shit at the wall to see if it sticks.
