Im honestly just curious about what keeps her fans watching.

Hell, she's not even an especially good streamer. Half of her stream is dead air on top of the fact that she can't talk while playing.
Unless her collab partner spoonfeeds her conversation topics, she's fine staying silent with the occasional angry noise
And I find the fact that she STILL hasn't put any thought into naming or shaping her fan mascot speaks volumes about how little she cares.

I'm just annoyed because my oshi always looked up to Ame as an inspiration, and I can't fathom why she still feels that way about Dooby.

Having a fan mascot is an easy way to build a connection with fans that is common even with indie vtubers. Dooby refusing to have one is curious along with the fact that even a year later she isn't releasing merch of her character. There is a noticeable difference in how Dooby is treating her character vs the expected way that Saba and Nimi treat their characters. After you graduate from Hololive it would make sense to build up your new character brand as much as you can. Of course if Ame was taking a hiatus because of something going on with Cover than her actions would make sense.
