By the way, let me demystify some stuff here.
First of all, ้ (Rou) is the name of the ramen/noodle shop in Chiikawa, and it's a reference to ไบ้็ณป (jirou-kei) ramen, or restaurants that are an actual Jiro Ramen location, or that follow a similar style and format. They do indeed have this kinda strict menu and style of ordering that they like customers to adhere to, in order to keep things rolling. Reminiscent of Soup Nazi, except they're not gonna throw you out for making a mistake.
Also, the "karame" does NOT refer to spiciness. Instead, it refers to the strength of the special onions sauce blend that is added to the broth. Many of these shops have their own "secret blend" that they tout. By saying "karame" you mean you want extra sauce, to make the flavor stronger. The official Chiikawa subs on Crunchyroll made that mistake here and called it "spicy garlic", when in fact Hachiware is calling out two separate things: "garlic included" and "strong broth flavor".
