The same way someone shouldn't start watching movies with the black and white classics, I believe it's best to not start watching anime by going to the old "classics".
Not that they're not good--they absolutely are, but it's better to start where anime is nowadays, with the better visuals,voice acting, and current trends. It'll be good for a start, and also allows you to easily talk about it with other friends who've watched anime.
You should *definetely* trust "weeb" recommendations, and work your way backward to the old gems, rather than go straight to the old gems and work your way forward.
A lot of people who advise older anime likely grew up with it, and are veteran weebs who've seen a lot of anime. As someone who just started, the goal is just to enjoy yourself, watch a good show and hopefully talk about it with some friends.
So, just go down the pop radio of anime and look at the synopsis of recent/popular, like demon slayer, attack on titan, chainsaw man etc.
The only thing I would advise against, is long-running anime like one piece or naruto. They take some time truly get started, and if you're not really into anime to begin with, you'll likely give up before anything good happens (and leaving a bitter taste in your mouth).
While anon above me wants to advise you the good old black/white classics of movies, I'm advising the opposite: going for what's at the theater right now.
