Somehow these math squares were so important they were rediscovered by nearly every western and eastern civilization
The Chinese would reliably divine information from these LoShu squares and the SATOR square was found out of place in history in Pompeii 200 years before they became popular in Rome

But what does the square do and how is it used?

I use them in a manner related to how they are used in Agrippa - for generating sigils. Sigils can be pretty useful for summoning and/or interacting with spirits.
You still have to know the name and nature of the spirit to generate a sigil using a magic square, of course.

Also it has something to do with the seal of Saturn and the number 5 in the middle
5 being the most metastable allotrope of carbon (diamonds)

But here is the thing right? The magic squares are numbers but the SATOR square is letters and the LoShun square is Chinese

So how do they still all work despite being completely different

another way to use them is to incorporate them into your talisman/yantra with other magical symbols. for example, you see this is arabic and hindu magic.

And how does this all tie into spontaneous symmetry breaking of the higgs mechanism? So basically everything is everything?

The magic square when tied to alphanumeric letters provides names associated with the powers of the enumerator. It is a synthesis of numerology, language as magic, and spacetime.
