I know of and understand nearly any and all esoteric symbology, but no explanation of the single covered eye symbology seem to really make sense with how prevalent it is or make sense in the context it's used in.

Odin, Lugh and Horus all share this symbolism. In each case, it's more or less a symbol of Divine Vision/Insight. It means the same thing as the Bell or the Lantern; it's the ability to "See". Jesus talks about this too.
