the reason it looks overcooked and together is because i added potato starch to the sauce

Potato starch is only good for making your sauce thicker, you can do it with corn starch or wheat flour too. Just make sure to mix them good in cold water.

I like gordon. He has some awesome tips and recipes, but I also watched a japanese chef do it.
To be fair, they did it on a gas stove both, so maybe that's where it went wrong. But I fixed it in the pan like risotto. It turned out pretty good.

Actually heat the oil in a wok before you put the rice in. Get it to its smoke point and drop it in. It'll be loud but what you want is an instant reaction. Keep stirring until almost done, then leave it for a minute or two for it to develop some crust. You'll find your rice to be firm and individual. Always use a hot wok and oil for anything Asian or Asian adjacent. Also use day old rice.
