Once I woke up in the middle of the night to see a spindly shadow figure moving slowly across the room. By the time I jumped up and got the lights on, the thing had already morphed back into my girlfriend so I didn't get to see the change but I know it happened.

Vedic literature has many examples. Hanuman has the power to transform and when he met with Shri Rama he did so in disguise. Nagas also can shapeshift. Well, in the same Ramayana the demon Marica took on the shape of a golden deer, to lure Sita. And Ravana also disguised himself as an ascetic to fool Sita. In the Mahฤbharata king Pandu was cursed by a brahmana he had struck with his arrows because the brahmana and his wife were transformed into deers. Back then it was normal to learn this power

A strange topic...
It seems that, if we take the laws of physics into account, most of what's described is simply impossible for a real living being of the human type.
This doesn't preclude the possibility of other beings using such camouflage or, in the case of a simulated world, simply changing the shape of a specific object.
That is, this is possible either by tangentially bending the laws of physics or by replacing a human with something else.
Even with highly advanced nanites and complex manipulations of the body, this would take considerable time, as precision is required, and the process itself would generate heat that would need to be cooled. Assuming the ability to locally bend time and transfer/storage resources in some compact dimension for use, then with this level of technology, it would be possible to avoid being "seen" by humans, and there would be no need to actually change the body if we could have many of them and simply reconnect the consciousness as needed, moving the desired one as easily as we change characters in games.
