What's the best low polygon style and where I can find good references?
There are nice models https://www.models-resource.com
They lack the animations though.

I recognize that model from the wireframe alone. That's Brian from Quest 64. That game has good low poly models. You're on the right track if you're studying that game.

Then emulate the games. Many 3D console emulators have a wireframe mode. Look into the tools used by the Boundary Break series on YouTube if you want to view the models at any angle.
