It's a lot of little pieces but you dont have ti model most of them and none of them are individually difficult to model.

If you're not trying to autistically model a hyper detailed working 3d model of a gun you can just use views photos or drawing like this. Left and right because guns are not symmetrical, but the top front back bottom viewers are probably suoerfluous but available regardless.
And protip: pic related is a toy, but if your model is going to be viewed mostly from a distance toys make good reference because someone has already peeled away the non-aesthetic details for you

so the trick is to model them indivudually? i also been told not to use booleans is this true?

or the intersect boolean is better (and somehow different than) boolean modifier?

Booleans are usually not good for modelling unless youre using software specifically designed to rely on booleans.
Stick to cutting faces and extruding.

This is the most essential skill. All modelling comes down to
>moving verts
>slicing edges
>extruding faces
Everything else, booleans and sculpting too, are just the comluter do those things for you with fancy rules.
