Why do adult men still prefer shonen ever seinen? Despite shonen being made for young boys and seinen being made for adult men, adult men still watch the former more than the latter.

This. Also another deciding factor is that shonen uses simpler japanese (I mean, it IS for kids after all) with furigana and seinen is often not. Oh and don't forget about nudity and gore. You can't show that to the kids...

Because it's honest. An honest story free of pretension is just easier to like. So much Seinen is just basically shounen but with more violence and whatever else and maybe a freshman understand of some philosophy to sound smart.

Shonen and Seinen are demographics, which don't determine the quality of the manga. For example, Osu Karate Club is Seinen despite being similar to Shonen. Claymore is Shonen despite being similar to Seinen.

Untrue. You will never see a discussion of economics in a manga for teenagers, nor will you find a manga for adults about Beyblade championships in elementary school.
