In the 90s Maria Sama got popular and people called it the return to class S, but Maria Sama itself is not class S and features content that would get any class S author arrested, like actual lesbians for example, though a lot of the content of the series, especially the anime is just ambiguous friendships. But at this time there was no viable commercial use of the word yuri, ironically the series helped popularize the word yuri and the upcoming yuri magazines would even feature Maria Sama artist to do the covers and people started associating the word yuri with subtext works too, but it definitely wasn't about portraying lesbianism as a phase.

I remember this started from a quick "would you rather girl A or B" sketch which became so virally popular that the artist was offered the opportunity to serialise it.
By chapter 8 or so, he was angrily ranting that his dreams of writing the kind of manga he truly wanted to were over; forced to write the kind of Tagakisan/Nagatori-like manga the market demanded whether he liked it or not, which he seemed to truly despise.
There were no chapters for years and I presumed he was fired by the publisher or something, lest the readers crucify him.

Enough chapters for a second volume have come out, so something happened behind the scenes? Did the artist change? He just chilled out after a while? Maybe this story was fake all along. What's going on?

They tried to write edgier stuff in the past, failed, then food court got noticed right out the gate which got them all assmad because it's dumb slice of life compared to their edgy works.
