Can't go wrong with HG, especially the more modern kits which have better articulation and colour-matching parts which don't rely on stickers as much. You can pick the HGUC RX-78 Gundam if you like its design.

As for tools, a decent nipper to cut off the nubs, a glass nail file to clean the market from nipping, and a cutting mat should suffice. Perhaps some tweezers too to help you place the stickers with ease. If you want to go a bit further to make your kit look nice, get a gundam panel lining marker to fill in the panel lines to give the kit some definition.

The first movie was already pretty shit compared to the novels, and I imagine the follow ups won't do much to improve on that front.
Especially since so much of the Hathaway novels and what makes them interesting and good is how focused they are on the inner monologues of the characters, something the films almost entirely lack and do nothing to make up for their loss.
