They evolved from *vocal* mimics. Precursor demons probably relied on staying out of clear sight and were too monstrous to ever pull the sympathy trick.

Because they don't experience them personally, they just observe human reactions and gradually figure out how to push buttons. Imagine a kid watching someone operate a microwave, they get a pretty good idea of what it does and how to do it, but without a full understanding they can fuck up and start a fire.

That's just hyperbole. They initially developed it for deception and conflict but they're not physically incapable of being honest when it suits them.
