I don't know about deep, but Z Bardock was cool. The doomed warrior fighting against his fate was compelling. I can see why Toriyama would have some issues with him, maybe it's weird he had his own unique armor instead of something more appropriate for a low class warrior, but overall Z Bardock was great.
Minus Bardock is Toriyama not understanding his character's appeal. Goku coming from loving parents hurts the story. It diminishes the brain damage he got and the influence Grandpa Gohan had on him. In Minus it looks like Goku was always nice, so I guess he'd be nice if he was raised alongside Raditz, Nappa, and Bejita.
The writing with Minus Bardock is very messy, it's like Toriyama couldn't decide how special he should be. Bardock gets a loving wife and enough foresight to realize Frieza is going to kill them all, but Toriyama robs him of the thing he's most known for, actually FACING Frieza. Why? Frieza remembers who Bardock is, one glance at Goku made him remember Bardock. Why in the Broly movie does Bardock just fire a beam at a supernova while Frieza is far away in space? And the other Saiyans just watch? Minus doesn't make Bardock cool, it just made every other Saiyan an idiot.

Zdock was a very Toei character, but not a very Toriyama character. he's very much a guy of definitions. He's 'the' low class saiyan warrior. him and his crew are like guts and the band of the hawk. Minus/Granolah Bardock is a lot more interesting to me because he's a lot more ambivalent. You can tell the goat-wizard version of Moro was created by one of them (Tori or Toyo), and the other decided to change him into a much simpler, run-of-the-mill DBS villain.
I feel like Toyo probably came up with the more unique, older Moro, and Toriyama didn't like that because it didn't fit DB or some stupid shit like that, but I could easily see it being the opposite for a different reason. Then they just streamlined him into a generic fighter with a few hax abilities, as we all can agree on.

One of the interesting parts about DB is that so much of it hinges on things happening exactly as they did. What I mean by that is, if you change even a little about incidents during the story, it would completely change the outcome of entire arcs. Even seemingly small stuff ends up being hugely important by the end of an arc, which means there is a LOT of potential for what-if scenarios.
Heroes only shows us the consequences of those scenarios, like "here's SS3 Bejita," but we're never given actual story of how that timeline differed by Bejita becoming a SS3 during the Buu arc (or whenever it may have happened).
Fans love that shit, and they've barely scratched the surface of it. Plus, it would sell tons of new toys, which they love to do.

Goku Black's ending should have been Goku and Bejita aknowledging they brutally lost and had an entire timeline erased while Trunks ends up sad but conformed by the fact that the timeline where Gohan gets to live a normal life and start a family is still intact

Part of me thinks it would've been cool to see Future Gohan again somehow, but it's probably better that they didn't sully that character's death, since it's such an important piece of the franchise. Yeah, and "canon" doesn't even mean anything anymore. People are still trying to reconcile Daima with Super because they both have that stamp of Toriyama's name that you're talking about, when, in reality, his name means nothing in that regard, since they aren't compatible canonically.
For a long time, people just assumed that anything without his name on it was non-canon, but we've seen cases before where stuff without his name was integrated into canon anyway (like the TV Special version of Bardock appearing in the manga itself, or the entire clusterfuck of there being 2 versions of Super, and I think the anime even had Z filler characters in it like Gregory or whatever, if I recall correctly).
I think people would be a lot happier with DB at this point if they just forgot about the concept of canon entirely, and just had fun with stuff, which is another reason these what-if projects would work beautifully. They'd help dissolve that rigid mindset of disapproving of things just because they weren't included on those scribbles Toriyama was handing out during Super's production, which fans will never even see, anyway.

In the anime, it has perfect ki control right out of the gate, right? So they gave him the ability to use it with the Kaio-ken... which still isn't very interesting, since it's basically just another transformation, like SSBE.
I think SS forms just got flanderized after a certain point. Nobody uses the different grades of SS1 because SS2 exists as a sort of perfect progression with no real drawbacks, and SS3, although having some use cases, is basically useless at this point, because there are now much better forms with no drawbacks.
It's just lazy writing, and it allows them to make simple fights, since they don't have special abilities to keep in mind. Toei even made UI a basic power-up, and Toyo's version isn't even that interesting either, despite his efforts to flesh it out.
God Ki had a lot of promise, initially, for the different routes they could've taken it, but it ended up doing nothing too interesting.
Even when characters get "unique" forms, like UI, Ego, Beast, Orange, etc, they're all just power-ups in the end.
I know UI and Ego supposedly have unique aspects to them, but they haven't been too important. Ego's trait of getting stronger as Bejita takes damage has been a bit of a nothingburger, because of shit like Granolah going "oh, okay, I'll just damage you even more, then, like I would have anyway, since we're fighting."

Toyo even removed what made Nuly's transformations special in the first place.

And then, what happened with Nuly? He figured out how to control it...
So, what is special about Nuly now? His hair is green? Anything that makes these forms special seems to be very short-lived, if it ever existed at all.
Beast has potential, because it's such a mysterious transformation, and it has just enough lore to make it easily expanded upon, as it's a unique transformation that ties into Gohan's weird sperg rage, but I promise they will do nothing new with it. I wish they wouldn't but they won't.
If I had to come up with something off the top of my head, I guess I'd want Beast to have some kind of drawback like, Gohan can sacrifice his ki control to make his power much more potent, but also more erratic and explosive, or something, and maybe make it suitably edgy by making him get more sadistic while he's doing this, like the way he acted against Cell as a SS2 (which is the version of Gohan that Beast is fanservicing so hard, anyway).
But I'm sure Toyo could come up with something way more interesting if he wanted to. The problem is that he, and Toei, don't care about making these forms unique, outside of the bare minimum to sell new toys. Toys don't have special abilities, so they just need to look different, which reflects in the source material.

When RoF's promotional poster came out, before SSB was revealed, I saw on the poster that there was a red lightning bolt behind Goku, and a blue one behind Bejita.
I was in high school at the time, so I had pretty shitty theories about DB, and I figured the red bolt behind Goku was a reference to his SSG form. I figured the blue one behind Bejita represented his own SSG form, which was going to be blue, and I assumed that SSG was going to be some new trend of each Saiyan having their own, unique version, with unique abilities.
We did end up getting a clusterfuck of rainbow forms, but they all ended up being pretty much the same in execution.
Some differences between forms are mentioned in dialogue, like Gohan saying he's having trouble controlling himself while sparring with Goku, but that was meaningless, because there was never any indication of that claim being true during the fight, as he just fights Goku normally, with nothing interesting happening.
