I'm playing a game that is pretty close to reality in terms of aerial combat, with one minor sci-fi addition: you get radar jammers with limited battery that can basically blind incoming missiles if you notch them. I have no issue with planes being CG, because I know most machines are at least plausible to make good looking even on a low budget (see. late Initial D) and they don't have a ton of moving parts unlike most mechs, the issue is always more on the directing side. How do you make an object that just moves flaps/wheels, turns and shoots look cool and engaging?
Honestly directing a plane anime like early Initial D but with flying and guns would probably work, at least make the longer fights/chases tense. Characters could also talk on radio unlike in that show which would avoid the issue of needing to cut to them for commentary.

There are basically two options for a modern day plane anime:
1. Ace Combat Anime series. Basically take the silly ass setup from the games and animate all the battles/politics shit. Would likely be slop. But would be great slop with banger music.

2. Take DCS footage and write stories into it somehow & sound track it. Problem is youtubers are already doing this en-masse, and with real ex-pilots:
