I have no issue with planes being CG, because I know most machines are at least plausible to make good looking even on a low budget (see. late Initial D) and they don't have a ton of moving parts unlike most mechs, the issue is always more on the directing side. How do you make an object that just moves flaps/wheels, turns and shoots look cool and engaging?
Honestly directing a plane anime like early Initial D but with flying and guns would probably work, at least make the longer fights/chases tense. Characters could also talk on radio unlike in that show which would avoid the issue of needing to cut to them for commentary.
