How well should I get to know this girl I have a crush on before I ask her out?
There's a coworker I like and I want to ask her to get coffee with me after work but I acknowledge I should build a bit of rapport before asking her to anything. We've had about 3 or so conversations that went well so far. I'm currently planning on waiting until next Sunday. Should I wait longer?

Don't ask her to a seven hour rural hike followed by a two week camping trip.
First date should be "hey how about coffee" and last about a half hour (maybe more if you hit it off)
Even dinner or a movie is "too long" for a first date.
Maybe lunch is OK if you were going to lunch anyway, but that may be too much.
If its warm out, go for ice cream "dairy queen" or "culvers" type place. If its cold out, go for coffee. In between, I'd default to ice cream.

why wait? If anything you should be quick. Though I wouldn't date coworkers. So maybe be really sure that she's into you, or it will be awkward.
