ok so basically I went on a few dates with someone and they told me they love me and I said I didn't love them back because I don't think we've known each other long enough to have those kinds of feelings

Well you don't have to do anything. Maybe just try feeling more comfortable with setting boundaries. You don't feel ready to say I love you yet, stand firm in that decision until you do feel comfortable saying it

you gotta set some boundaries. tell her she need to relax. from the sounds of it she seems like someone who has either never dated before or is insecure about herself which is why she seems sad after you failed to reciprocate her feelings. People love bomb due to being lonely or insecure.

this is less of a you problem than a her problem. I'd suggest you sit her down and explain to her how you feel about this. Make sure to have her understand that there is room for growth and that you could eventually love her but that you go at your own pace. Relationships are agreements between both of you and she can not force you to do something you're not ready for.
