Are there any fields/professions that can be considered a mix between blue collar and white collar work? I've heard people describe being an electrician as a sort of white collar trade, but are there any occupations that are well-respected and more balanced?

My goal is to transition from HVAC tech to sales, management or teaching; something where I can still turn a wrench but don't every day. Maybe you'll have the same kinda luck with that?

Architect/builder. My buddy has an architecture degree and runs his own construction/renovation business, he draws up the plans and then oversees and participates in the build. Probably spends about a third of the time at a desk and two thirds building shit.

Mechanical engineer here for 15 years, pretty solidly white collar but I've worked jobs where I've had to get my hands dirty building and testing prototypes, installing equipment, or troubleshooting field issues. True mfg types respect engineers who aren't afraid to get dirty infinitely more that the leather dress shoe clean hands types. Don't just fuck things up for them then run back to your office, and don't be too proud to push a broom.
