What do I say to who says “Politics affects everyone so you should care” after I told them I don’t care about politics?

Nothing, they will never stop pestering you about the ideology they hold and want you to hold.

Haha that reminds me of a joke from my country, hopefully it translate well; three women are walking through the forest, just looking for someone to do some chores as they have been asked to prove their worth to marry. Explain modern politics are a firehose of misery and you value you mental health enough to just not engage. Say you don't vote because you don't know, and whatever comes of the elections will come. Say you don't judge them, heck you are happy they are engaged, but you just can't spare the mental bandwith for it.

And when they don't shut up, ask them who they like in the next election, pause in contemplation, and say you are going to vote for whoever is running against them if they don't shut up.

just go "i don't know bro, haha!" or "that's crazy, bro!" until they get the idea. act like a jolly doofus that really doesn't know shit about the news or politics.

if it's really important for them to have a good opinion of you, placate and pretend.
if it isn't that important, pick any way to tell them to get a life. could do it straight up. could tell them that being preachy won't win them over friends (much less political followers). could say anything.
