If I'm waiting in line, what should I do if the person in front of me goes to do something off to the far side, and then comes back moments later expecting to be in front of me again?

They should ask you first for your permission to leave the line. If they just leave without saying anything, just move and ignore if they come back.

This may seem stupid and passive aggressive, but if I don't really mind waiting, and someone in front of me leaves the line, I immediately go to the back of the line, or just leave entirely, so that when they come back, they wonder where the fuck I am and how they're gonna get back in line if I'm not there.

If your ass denied me coming back in line you would be the smallest dick person in the world. I would stand there anyway. If your ass decides to make a fuss I'll act oblivious and wait for security to come over. This is the most pathetic hill to die on.
In a high trust society (Netherlands) people will even wait for you until you return even if it's your turn to scan. And if they didn't wait then they'll let you go right after them. Don't be a filthy low trust person. Make your environment better. Be the change.

Though I do agree that it's better to ask, but sometimes people forget, don't be an asshole
