My family had an enormous Alaskan malamute for a long time and man, don't take Nordic dogs it's impossible to match their energy. Also they are a less loving breed and will mostly focus on how to get food from you, not really interested in being pet. And despite the fact that you can't teach them shit because they aren't interested in you, they are pretty smart at stealing stuff. Mine found out how to open the door of my barn and ate the chickens. They never stop eating. I'll regularly loose the dog when walking in the forest because she'll smell a deer and hunt it for like 5h. And god forbid me trying to touch the food of the dog or even approach it when it's eating. It's basically a wolf when food is involved. Also sometimes when it's tired it'll just stop somewhere on the trails and I won't be able to move it (140lbs of unmovable weight). I love it anyway but man what a pain. And it needs to go out every single day otherwise it's sad

Malamutes are notorious for being hard to train and where I live we've contacted 2 dog trainers when it was young and they both told us they don't take malamutes. But anyway you probably know better than me because you spent some time online

If you are looking for non-mastiffs it's tricky. I prefer getting a dog that is as healthy as possible but big low-drive dogs with an even lower chance for neuroticism typically fall into the mastiff type. There are Boerboels which are the healthiest mastiff type breed and they don't have that overly wrinkly look while maintaining the stockiness that comes with mastiffs, but they are far more active and I am unsure if they would suit an appartment enviroment like an English mastiff. There is the wolf and deerhound however which are both laid back as well as big if you are fine with sighthound / lurcher type dogs. My grandfather was a hermit who lived with an Irish woldhound and his was as lazy as he was. The only problem with them though is that Irish wolfhounds in particular have really bad health problems that can make them live a lot shorter lifespans than mastiffs, but the Scottish deerhound can live around 10 or more years if you keep them healthy. You can also just get a Greyhound as they can be on the larger end of medium sized dog breeds with their heights and they are very healthy in general. But the problem with them is that while they won't go neurotic they can often times be anxious prone. So if you can afford to be around them a good amount of time and walk them here and there they could fit the bill, but they arn't really super huggable compared to mastiffs or the deer or wolfhounds. The other alternative is the Great Pyrenees which look like giant Golden Retrievers but without the high drive and neuroticism. They are fairly laid back and can live around 10+ years but they are a traditional livestock guardian breed so they tend to like to roam. If you don't have an acessible backyard for them to pop in and out of you will need to do short walks with them like you would with a small dog around the block.

In addition if you want a shepherd type dog there is only one I can think of which is the Caucasian shepherd. They are THE largest shepherd type dog and they are one the more laidback breeds. They can do well indoors and are often quiet but while the Great Pyrenees needs short walks if it can't roam the Caucasian shepherd does need to be walked even if you have a yard. In theory you only need to walk them once or twice a day but the catch is that they do best with high endurance walks, so if you only want to walk them here or there you need to put in a really good one to keep them happy each day. Kind of like the inverse of a Greay Pyrenees. The other catch is that they are really difficult to train because they are fucking stubborn and you will need to socialize them extensively at a young age to ensure they are not reactive to people or other dogs. But if you put in the work you will have a giant dog that is quiet, calm, laidback and with looks to rival a Malamute.
