I think animals are significantly more conscious than we give them credit for in general

Naah if anything science troons are giving them way too much credit. Straight White men formulated rules and logic to avoid anthropomorphizing lower animals so dat's wacist and we have to abandon it all and start over from the assumption the quirky chungopus is just as smart as a human! See it opened a jar after randomly grabbing at it for twenty minutes because it could see a crab inside. It's all just further decay of the West.

how can you tell? also, what we consider being conscious and "rational" is totally our bias,we we'll never know what and how non-humans experience the world

It's pretty obvious that animals have emotions and consciousness, the idea they were emotionlessness automatons was always cope because it made it easier to justify exploiting them. If you kick an animal enough times, it'll become afraid of you and either flee or bare its fangs when approach. Animals have dreams and enjoy playing, they have favorite foods and they will have individuals of their own kind they like or dislike for reasons beyond our understanding. Some even have long-term memories that they pass on to other members of their own and mourn their dead (such as crows and elephants).

I think it makes the most sense to assume all animals have some degree of consciousness. Maybe sessile animals would regress into semi-consciousness but it seems intuitive that an animal that moves around and consumes things has some sort of decision-making process.
