When I made ice cream from scratch I used heavy cream and whole milk.
My guess is ice cream producers use nonfat/skim milk because its cheaper, not because it makes a better product.
Definitely rather have that Straus than anything else posted so far.

60% cream and 40% whole milk will have less fat than 70% cream and 30% skim milk even if the latter seems like a cheaper product. you can't really just go by the inclusion of skim milk as an ingredient. you'd have to look at the nutritional label for overall fat content.

i think it's too complicated for a claim like this to just be taken as true all the time. there is plenty of evidence that some people are biologically wired to consuming dairy, which includes the fat.

i seem to feel worse consuming processed dairy or dairy mixed with other foods especially starches and sugars, but milk alone is fine. i'd be curious to see if milk causes less problems if you drink it by itself compared to eating pizza or ice cream or something even if the amount of fat is the same.

I once made made ice using only heavy cream for the base (no milk) thinking more fat = more flavor, right? Turns out it's not as good as it sounds.Too much fat blunts the flavoring/sweetness and your tongue already has a harder time discerning tastes of cold foods/drink over those served at warm and room temp plus the finish left a greasy coating in the mouth that wasn't very enjoyable.

This, man has conquered nature. We've mastered how to extract and live on another species's milk then took that extracted milk and separated out the cream and then add it back in exacting quantities to control the total fat content to a precise %.

Tillamook is ok, but they whip so much air into it that you're paying for the volume and it's not a good value. Plus it's made from milk from Boardman, Oregon and not Tillmook proper. Umpqua is superior but it doesn't have national distribution. I just make my own ice cream now and it is just far better than anything I can get at the store. For that I use Umpqua heavy whipping cream, which doesn't have carageenan or xantham/guar gums.
