Because the quintessential hotdog when depicted in any media is always bread sausage, ketchup and mustard. In cartoons, in comics, in movies and shows. The phrase Hold The Mustard used when someone buys a hotdog in media cements mustard as a standard ingredient.
Thats just the cultural standard, so any deviation from it is not truly neutral.

No, chili is chili and mince is mince. I live in New York and a "mince meat hot dog with cole slaw" is not a thing in Coney Island or anywhere else I've ever been. You can get a hot dog, a chili dog, a chili cheese dog anywhere in the country that sells hot dogs. I've only ever seen "mincemeat sauce" used as a term in relation to English meat pies. If you come to America, and I recommend you do in order to dispel these weird misconceptions you have, you're not going to find a "mince meat hot dog", especially not in Coney Island. I imagine you might find coleslaw somewhere, but I've never seen that either. What you will find in literally EVERY hot dog-oriented food establishment is chili, cheese, relish, and kraut.

I know nobody fucking calls it mince in the US, and I'm oversimplifying it but most hot dog chili is literally just ground beef sauce. Just replace the word ground beef for mince and wa la.

Also, holy shit dude the entire state of WV and NC eat these things all the time. I'm not sure about KY, TN, VA, SC, or GA but I imagine you can find them there too. Hillbillies put slaw on their dogs like nobody's business. Just go to literally any cookout and you'll see it listed on the menu.

Right so calling it a mince hot dog is retarded and wrong. In America we have "chili dogs", they'd hot dogs with chili on them if you're wondering what they are. When we see a picture that says something as ridiculous as "OY BRUV A BLUDY MINS HOT DOG" we're being both logical and valid in calling it out as European, which it is. If you come to America, almost any hot dog stand, hot dog restaurant, hot dog rest stop, whatever, is going to have chili dogs. They're going to have chili cheese dogs. They're going to have relish on the side, and they're pretty damn likely to have kraut too. What they're not going to have written on any surface in the entire store is the word "mince".

Now you're not from America so it might be news, but people don't really go to West Virginia. I'm sure they eat possum and feces there too, that doesn't mean I'm going to put it on a chart about hot dogs and NOT mention chili dogs, cheese dogs, chili cheese dogs, relish, and kraut. I figured it was just normal slaw, but it's certainly a more unusual topping than chili. Everybody likes chili dogs and I'm not going to sit here and let you bad mouth it just because you watched some Youtuber who goes to rural parts of the US pull up to a West Virginia cookout and slather his hot dog in roadkill and decided that was somehow more normal.

This is illegible to me. I've been to southern fast food places before like Waffle House, Checkers, Popeye's, Cracker Barrel, etc and the only one I've ever found compelling was Chic Fil A. I don't think I ever saw a mince meat and coleslaw hot dog before at any of them. If you go to Nathan's, which is really the end-all be-all definer of what a normal hot dog is, you won't find that.
