a soft cheese on pizza can be pretty good. i usually like ricotta on mine. feta can be good too. i think the cheese in the webm is called catupiry and it's kind of a processed cheese, the amount seems a little excessive but it probably wouldn't taste bad with less.

and corn idk. japan does the same thing. maybe they like the sweetness to balance out the salty cheese. mexicans also put cheese on grilled corn.

yeah but especially if it's still in brine it can be a bit soft once heated. gives a different texture than firmer cheeses more similar to ricotta.
