It's a different preparation that is called "over easy/medium/hard" in English. I'm not sure we have a word for it in Italian since I never saw that done until I moved to the US. We just fry it crispy in olive oil.

I can't speak for every country, but it's basically unheard of in France. An egg, if not scrambled, boiled (soft or hard), or in an omelette, will be sunny side up, period.
I tried flipping one, once, and maybe it was a lack of experience on how long to keep it flipped, but it was a significant downgrade.

Same with literally every non-anglo country ive been to. It's just not done, like how most don't deep fry their eggs. In fact, you Google deep fried eggs in most languages and you'll mostly get pictures of boiled eggs that are deep fried after the fact but I specifically mean cracking eggs directly into hot oil. In my results, of the first twenty pictures, only two are of deep fried eggs as I just described, 13 are boiled eggs that are fried after, I've is poached for some fucking reason and the remaining four are pan fried.
I don't know why this lady is having such a difficult time understanding that different cultures do different things that she had to make up some fiction to justify what her country does. It's just another difference and that's fun!

I want a bit of crisp on both sides. Also, because you're cooking both sides and you still want to yolk to be runny you use a higher heat so it cooks much faster.
It's also just fun to practice the dexterity of it. I'll admit that sunny-side-up aesthetically mogs over-easy though and I do occasionally make it that way just because I want to make something pretty.

Americans are terrified of cooking things in real fat. They'll use any alternative goyslop for 'heart health' (actual food just in moderation is basically communism) and so the idea of just basting the top with fat is insane to them. On top of that their eggs are so low quality that even slightly runny yolks risk infection at a far higher rate than civilised nations. I think NOT flipping them is due to your lack of skill and level of anxiety about it.
Cooking the raw top, even for a moment (over easy) is best, duh. Over and partially done is utterly acceptable, and still runny, to anyone avoiding the risks of foodborne illness, and the number of commercials show people on biologics is a growning percentage of the population in modern healthcare.

Along with my own $16k/year prescriptions, my intentionally weakened immune system now has zero time for a hospitalization and risk of death. I still enjoy an over easy or over hard egg. Any cheese and chive filled omelet is also well done and enjoyable. Pregnant, the elderly and according to ai, 37% of all drug cost spending is now for this one class of meds.

If you want the top to be a little bit more solid, then put a lid on the pan for a few seconds. The steam takes care of it. Just don't overdo it, or you end up with the same issues as with flipping.

In reality you can just toss some water into a a pan and put a lid on it and it'll cook just the same way but you can see the yolk.

i eat 7-12 eggs a day with cooked whites and raw yolk. i break all the eggs into a bowl. using a spoon i separate the yolk into another bowl. then i fry the whites alone until throughly cooked. Then I dump the cooked whites into the bowl of raw yolks.

I actually melt/heat some butter in a separate single egg pan then pour it from that pan over the eggs - you need to use much less butter when you do it this way because you don't need so much butter than it's easy to scoop with a spoon.

I did breakfast service for the Hilton and my job was mostly just knowing how to cook egg.
