i like broccoli steamed until it's soft. it gets a little sweet. "just right" is usually bitter without any freshness of raw, it's the worst of both fully cooked and fully raw. you need to commit one way or the other. don't half-ass "oh i'm just going to cook it a little bit". no. it's either raw or fully cooked.

Left is raw, center is blanched, right is steamed probably, would need to see if mush. I'd say right isn't even cooked properly at all - needs some roasting and browning for flavor.

You might be a supertaster. My ex was and would wince at iceberg lettuce being too bitter (yet could happily eat baby spinach, go figure) and was so-so about broccoli. But lettuces in general, man, made her put on that disgusted "I just ate something extremely bitter" look on her face.

I’m not the anon you’re replying to but that’s totally me. People often say iceberg lettuce tastes like nothing but meanwhile for me it’s overpoweringly bitter. I’ve never eaten it voluntary but small bits sometimes get in things when you eat out, and that tiny shred of lettuce only as wide as a pencil overpowers the whole bite.

That was my post. I mean… I can taste the bitterness, especially of the core, which I like to shave into leafy ribbons and include in my salads, but either my sense of taste simply isn't as good as hers or I don't mind the bitterness. I often wonder what the hell people are talking about when they say that iceberg has no taste at all when it has a definite, unmistakeable bitterness.

Iceberg definitely has a slight bitterness, especially the white parts and towards the core. it isn't unpleasant but it is definitely there. I've been a daily cigarette smoker for 20 years and even I can still taste the distinct iceberg flavor. I think a lot of people just mindlessly chew and swallow without even really tasting the food.
