Made some spicy miso ramen with a little bit too much minced chicken - doesn’t look the best but it tasted great, considering it was my first time making it

Zucchini noodles with a spicy tomato sauce and homemade frozen yogurt.
The Zucchini noodles are because I'm a fatass and dieting.
560 kcals in total for both dishes. Very tasty.

Yeah, mostly for visual interest to be honest.

The ingredients are quite simple:
Greek Yogurt (homemade, so extra fermentation flavor)
Some milk to thin it out
0.15% by weight each Xantham and Guar gum (for ice cream texture, these make a huge difference in how close it comes out to store bought)
0.01-0.02% vanilin by weight for vanilla flavor that's not too forward
And some sweetener.
Frozen and then churned in a ninja creami. I really like yogurt so this is my favorite flavor despite how simple it is - and you can add stuff for different flavors same as you'd do with yogurt.

Sounds lovely, we eat a lot of Greek yogurt in my household so this would be a great addition for the upcoming hot days. I'll probably add some cubed mango pieces for sweetness - since mango with yogurt is my favourite combo atm.

They are fried in a pan and semi-hot. With zucchini noodles it's important you don't overcook them, as they get mushy otherwise at which point you might as well eat puree.
I basically just toss them in a pan with some oil for a few minutes, flipping regularly. Just enough that they stop being room temperature, but not enough to actually make them super soft.
It's probably still not for everyone, but I like them a lot.

Just note that the ninja creami is a pretty specific device, I doubt a blender works as well. If you do have a proper ice cream machine with a compressor that should work though. Frozen mango sounds great to go with it.

Thanks bro, it was super easy to make and took only 15 mins.

The only other ramen noodles that the Asian groceries had contained sugar for some reason and other un-necessary ingredients. These ones contained only wheat, flour and salt.

The butchers minced the chicken for me using a machine, it was around Β£7 per kg - I used about 300-400g I'd say for this meal.
