How much sauce is too much?
Anonymous No.21403326 >>21411306
Yes
Anonymous No.21403331
depends on the consistency of the sauce. I'd eat some meatier sauces on their own with a spoon but I wouldn't eat a bowl of marinara.

If you have a spoon or a baguette slice then it's not possible to have too much sauce. If not, then tossing the pasta in the sauce BEFORE transferring it to the plate gives you the perfect amount of sauce every time.

I remember reading somewhere that you should use very little sauce, to let the pasta show itself off. No clue whether that's true.

cook the pasta in the sauce you polish schmuck.
My uncle told me, less sauce is for poor people. Pasta costs so little, think about polenta, how much sauce would you put on polenta?

And we don't use the Parmesan for finishing, it's strictly for table. We use the pecorino in the sauces.

This along with kids is what I do. Cooking pasta in the sauce makes it much more flavorful and absorbs alot of the liquid which you naturally get from tomatoes to make the sauce. No boil Lasagna is best. Just layer everything together and bake. It takes a little longer, like 20 minutes but turn off the oven and just let it sit. So good. No liquid on the bottom.

Wise wise words friend.

It depends on the type of sauce. For smooth sauces like marinara, I prefer just enough to coat the pasta, but if it's something like Bolognese ragu, there's never too much.

I firmly believe in doubling the portion of sauce ingredient-wise, and also maybe adding heavy cream and lemon to tomato sauces to make them richer.

It's like how I used to be puzzled by cooking tomato soup with water, because it gave it a more metallic taste, whereas cooking it with milk was way preferred even though it may not honestly turn out to be as "sour".
