How much sauce is too much?
depends on the consistency of the sauce. I'd eat some meatier sauces on their own with a spoon but I wouldn't eat a bowl of marinara.

cook the pasta in the sauce you polish schmuck.
My uncle told me, less sauce is for poor people. Pasta costs so little, think about polenta, how much sauce would you put on polenta?
And we don't use the Parmesan for finishing, it's strictly for table. We use the pecorino in the sauces.
>>21407014This along with kids is what I do. Cooking pasta in the sauce makes it much more flavorful and absorbs alot of the liquid which you naturally get from tomatoes to make the sauce. No boil Lasagna is best. Just layer everything together and bake. It takes a little longer, like 20 minutes but turn off the oven and just let it sit. So good. No liquid on the bottom.
Wise wise words friend.

I firmly believe in doubling the portion of sauce ingredient-wise, and also maybe adding heavy cream and lemon to tomato sauces to make them richer.
It's like how I used to be puzzled by cooking tomato soup with water, because it gave it a more metallic taste, whereas cooking it with milk was way preferred even though it may not honestly turn out to be as "sour".
