You could probably use milk instead of cream. Or starch instead if the roux if you want to cut a lot of fat. Most of the flavour comes from the fond anyways.

Careful now, I’ve been told Hainanese chicken is not plain and you’re probably a faggot. After all, chicken boiled in water, rice made with the chicken water, and that same chicken water served on the side is SOOOO uber flavorful umami wowwee.

I feel like this has to be inspired by the last thread. Anyways I'll sometimes get chicken bits and add a little salt then fry them in olive oil until each side gets a nice little golden browning. I also really like boiled eggs, I like them right when the yolk is just barely solid.

Sushi is an obviois answer here, and lots of japanese food ingeneral ( :O japan). I also like steak tartar with simple preparation, and you can't go wrong with fresh baked bread and butter. And poached salmon with fennel shalots and lemon just melts in your mouth and is to die for.
