you have received from a customer that walked in and did not call ahead? And did you make it for them? Also, were they at least a little appreciative of your effort?

A pack of YNs came into a BBQ restaurant I worked at over a summer and ordered half a pound to a full pound of wings between each person, paid, went out to their vehicle to smoke, and promptly left. We only had 3 fryers and 1 was for catfish only so the other two were getting so many wings back to back the oil cooled down, spent about 20 minutes just frying fucking wings lol. We waited almost a full hour for them to come back, they never did, we had so much the whole foh and boh had wings it was a pretty good day.

at the sandwich shop we would decline any big orders without a decent time's notice. it was the difference between making 1 person happy or 300 different people happy. bread takes several hours to make, and sometimes with the orders i had to pass on, it felt like the people didn't understand that we made our own bread or that they were in big competition with everyone else who wants food that day.

biggest order was somewhere around 700 dollars. there was another time someone wanted to place several 500 dollar orders to take place across several weeks but i don't recall that manifesting.

I've worked in all kinds of restaurants, and you'd randomly get busses of sports teams, or groups of traveling seniors, or what have you all the time. Sometimes it'd be fine, and sometimes you'd end up so in the weeds it was an hour+ wait. I don't miss cooking for a living.

Not fast food but once when I worked at a chicken processing factory, after lunch we got a rush order of 8 pallets of buffalo wings, 4 pallets of honey garlic wings and as many pallets of BBQ wings we could prepare for the next day. Apparently the supplier for the nearby stadium flaked out and they has matches all weekend. We ended up shipping about 48 pallets by the end of the night shift.

>sports teams
happened one time it was a group of ~35 people on a saturday evening in a place that's normally known for serving lunch. i had to bulk up the prep during the rush, call other restaurants for more supplies, and sent my only help to go pick it up, so i handled all of this by myself. during the chaos the spotify playlist ran out and the normally loud lobby turned to silence. before they left i asked for a word with their coach and now there's a lobby full of people staring at me in silence. all i wanted to say was thanks for stopping by but give us a little heads up next time and i ended up sounding like a huge dick when i didn't mean to cus i'm not that good with people. it's one of those cringe memories i have.

they did call ahead before the next time that happened and what a shocker it went perfectly smoothly since i had time to prepare for it.

405 units at 30 seconds each is 3.3 hours or 1.68 hours of work if you have a second make line
there's over 6 full cycles of bread here so that is about 6 hours of just baking bread just for this order
not to mention the extra prep that comes before this. 5k is a lot of bins of tomatoes, lettuce, onions & cuke
there's also another big catch
>ready at 11am
that's when the store opens. you'd specifically need to call in your staff before open, do all this shit, and then do your regular $3-4k lunch.
try getting anyone to do that for 9 dollars an hour.

we did something like this once when we got a $4k order and it was all box lunches like this. it involved multiple stores in the franchise to bake the bread and bring it to us. i had set the boxes up over the course of 2 days. day 1 i labeled all the boxes, day 2 i inflated and stuffed them with the shit they needed to come with. every one of those boxes specifically gets 1 menu, 1 napkin, 1 mustard pack, and 1 mayo pack, plus the choice of chips or cookie. each of these also specifically come with a spear of a quartered pickle. which is either wrapped or ziplock'd depending on what your location does.

forgot to mention the extra slicing since jj's does that the day before and sometimes day of selling it
there's easily a +5-6 turkey here, +1 cheese +1 beef +1 vito +1 ham
so night would have to slice about 11 turkey, and 3 or 4 vito while morning has to slice like 4 ham, 4 cheese, 2 beef, 12 lettuce bins, 8 tomato bins, 4 onion bins, 3 cukes, and then probably slice more as the day goes on
