I tried them for the first time a few days back and liked them, but I didn't find them amazing. For something in a can I was hoping for a vinegary, pickled taste and not just plain fish. Still, good to know I like something canned that I can eat at any time.

On an unrelated note, i always dress my canned sardines in a lot of lemon or vinegar. It completely neutralizes any fishy odour, although I don't mind it and a good can will only have a mild odour anyway.

I've been thinking of making egg salad with soy sauce marinaded soft boiled eggs, cream cheese instead of mayo and sardines in olive oil to spread on sandwiches, but it might be a little rich for a summer meal even with thin sliced cucumber and red onion pickled with dill.
How do I make them less fishy? I enjoy tuna, salmon, snapper, etc but sardines are wat too potent for me. I made fish cakes and they're good but too time consuming. Ideally I just want one other ingredient I can mash together with the sardines and have a nice mild fish taste. Crackers and sauce are not enough
I just ate a tin of these. Didn't have any bread or crackers to go with em, so I just had them as was.

for me it's canned mackerel at the top of this list of omega-3 content in fish, specifically in the Total EPA + DHA column. Sardines are still a good source, but only 1/2 of mackerel.

Herring is a naturally oily fish, and that's where the fishy flavor is held. It's never going to taste less fishy. If you want to mask the flavor of it, then why even eat it to begin with? Just eat a different kind of fish. There comes to be a point when you add so many other ingredients to something just to mask a flavor that you don't like that you may as well not even include it at all.
