For chains, it's my local Safeways and Acmes. I don't know what it is but there's something about Acmes in South Jersey and the Delaware Valley (and Safeways in Delaware itself) that they just 'get' subs/hoagies. No supermarket or chain place compares and I don't know why.

I just tried Firehouse Subs and it was pretty good, I'll have to try the Quiznos I recently discovered and see if they live up to my memories. I've been wanting to up my own sandwich game but my grocery store apparently got bullied into getting rid of a lot of stuff to make room for more Boar's Head which I refuse to buy after all of their factory shittery.

Not her, but it's called scooping and it's extremely common literally everywhere in the US. You slice the roll in half/butterfly the roll and scoop out some of the crumb. It's particularly useful for goopy fillings like tuna/chicken salad but lotsa places do it just to fit more meat etc in there. If done properly, you wouldn't even notice it was done at all because the sandwich gets compressed as it's wrapped up for sale.

You know not really. Pic is my most recent one. There has been something of an annoying supply issue which has made it difficult for me to gather all the ingredients efficiently (basically my supermarket has switched their grocery deliveries from a central warehouse which does not offer sliced delly meats. so my option is to go shopping in person or order the cheap horrible pre-packaged meats which I fucking refuse to buy because they suck). I've been working 10-12 hours a day since January trying to get a major product across the finish line, so I've been relying on deliveries rather than getting to the shops.

I'm gonna post about it in the Philly thread but when I lived in Philadelphia, specifically a part of town which at the time lacked street lighting or indeed any neighbours at all (my apartment was literally the only residential spot anywhere for at least two blocks, surrounded by warehouse and crumbling former factories), there was an abandoned subway station about three or four blocks north of me. You could access it if you went through a specific, not-often-used subway line, the Broad-Ridge Spur (so called because it "spurred" off of its normal route of just going up and down Broad Street and under Ridge Avenue, ending in Chinatown; I lived just north of Chinatown at the time). The Spur used to stop there but since literally no one lived in my area anymore but me and the factories were abandoned, the station was costlier to keep open than otherwise so they boarded up all entrances. There are a few other abandoned subway stations and tunnels but the only one I've ever managed to get to was the one I lived near. No mole people, though.

I went to one of those once, staffed by an elderly husband and wife, and when I came in and ordered, the wife had to go get the husband to make my sandwich, and he acted all annoyed that he had to make a sandwich, and the whole time the wife was walking around us loudly vacuuming. No. The best thing is to go to local bakery in the north east. You have to go to an old bakery run by third generation immigrants though, don't go to any of the foodie artisan bakeries. Artisan bakeries usually have good bread, but it isn't grindah bread. The bread is probably the most critical part of the grindah to get right. Subpar bread will ruin a grindah even if the interior ingredients are good. If you don't have access to a bakery, a lot of supermarkets sell subpar sub rolls although some supermarkets do stock bread from local bakeries. Burn local if you can. I think you might be able to buy bread from chain sub shops if you ask nicely. Other than making your own, I think that covers it.

Several places in the Philadelphia area all went to Indian owners, weirdly almost always Gujaratis. Gujaratis are the Indian subtype most likely to be vegetarian. I know one guy who eats chicken outside of the house when his wife isn't around but won't eat any other meat.

That only happens when it's not a deli. Chinese places become Indian takeout. Italian places become Indian dine in. One family from near Udupi took over an Old Country Buffet and ran it as a South Indian buffet. Being that most Americans are entirely unfamiliar with South Indian food, never mind that of Udupi in particular, they failed miserably. Pity, too, since that buffet was absolute tits. Their tomato saar (yes, that is the actual name of the dish lmao) was really fucking good. That's just the Udupi name for rasam. And despite them being from Udupi and therefore likely vegetarians, they had a lot of Mangalorean seafood dishes, which confused the fuck out of most people unaware that yes: Indians eat seafood. They had this steamed fish on the buffet in a mustard-based curry that has that two-heats thing going on with the nasal mustard-hot and the throat chilli hot.
