I remember reading some lad on here talking about how you can reverse sear these cheaper tougher cuts so I'm going to have a crack at that but with some bullish dry rub. They aren't exactly thick enough for a reverse sear so I guess we'll be looking at a medium to medium well bit of beef.

Very very nearly completely overcooked, but better than the travesty of your dog food tier lamb leg. Medium well is not my preference.

Get a thermometer if you want to reverse sear your meats, big boy. Pull when it reaches 125ish and then sear it quickly using a high smoke point oil. 1 minute per side.

Did you add anything aside from butter and cream to the mushrooms? It would have been a really good idea to add parsley, garlic and white wine or at least lemon juice to them. I bet your meal was way too rich and lacked any balance at all. Try and add an element with some acidity next time you make a rich dish like that.
