It's a pleb filter. Any dickhead can come in and learn rice in a week. Learn slicing in a week. Learn packing sushi in a week. Learn seasoning and plating in a week. And after those couple weeks he can pump out okayish sushi.
But someone who's willing to go through the struggle and put in the dedication and humility to master the basics for a long time has the dedication and drive to learn and put real mastery into the finer details. Yeah it's obviously the Japanese way but it's fucking stupid and a waste of your one life on this earth man. It deserves lampooning. Jiro would have been a better chef if he spent those 7 years learning other techniques with rice from other cultures involving different preparations and ingredient bases, and he would be better equipped with deeper insights on the food he works with. But the japanese way is not to think critically or understand things on a level deeper than "this is how it was always done and this is how I will always do it."
It's worth no more respect than what you would give to any person spending their career in a particular field they are passionate about(which in its own right is worth a good amount of respect, don't get me wrong there). But within that echelon of people who have dedicated their lives to a particular pursuit, it is worth far less respect because you spend less time truly engaging with your passion, instead mindlessly worshipping its past. But people see this sick japanese mindset as something of a spectacle, so they give it a confused reverence because they themselves are rightfully not stupid enough to waste 10 years of their lives on sushi rice specifically.

There's actually a lot of different types of rice.

In general, Brown rice is quite different from white rice in taste and texture. It's healthier due to the amount of fiber (which is removed in the process of making it white), but idk if it would fit in sushi.
