it's a less than 30% difference
Resistance and flow through the puck is driven almost entirely by pore size (grind coarseness/fineness) and length (puck height). This is called Darcy's Law btw

Darcy's Law says flow depends on cross-sectional area. If only part of the puck is letting water through (like in the EPMZ_107A), that is reducing the effective area and totally changes the flow. You can’t claim it doesn’t matter while ignoring the variables in the actual equation.

since theres almost no actual sugars in coffee, and flavor is subjective, sweetness can come from different sources. on darker roasts, you might see tasting notes like caramel or cacao, while on lighter roasts, youre more likely to see fruity tasting notes. youll just have to try different coffees to find out which you prefer (:

I had two different coffees from different roasters, both of them rested 2 weeks and then vacuum sealed and frozen.

My power went out and both coffee's thawed to temperature, but remained completely sealed, no moisture. I thought nothing of it and threw them back in the freezer for another freeze.

One of the two coffees became incredibly easy to grind and tasted very flat and stale. The other is still tough to grind and tastes the same as when it was fresh. What gives?

I'm not sure what to make of it. They should freeze the same. They're very similar other than processing.
The one that stayed fresh went through a double fermentation, the one that went bad was washed.
My guess is that maybe the washed coffee had a micro leak in the vacuum seal, but I won't be able to verify that until I get to another frozen bag after I go through my current thawed stash.

I'm not sure about 2 weeks. I work at coffee roastery and we rest it for 48 hours max. There's barely any aroma to it if you leave it for longer and it starts smell soggy after a while. I wouldn't even dare to taste it at that point. I guess it's fine if you rest it inside the pack but I don't see the point. Most of the nitrogen goes away in first 8 hours. We often drink same day roasts at canteen and it's much better coffee than I get at coffee shops in my area at least.

well i use the clever dripper so i just put the filter in, then fill with boiling water and just let it sit while i grind then dump it out when im ready to brew.

A smaller basket means deeper puck. The water will flow more even over a larger range of viable grind sizes. The main argument is statistics.
Imagine you had a single layer of ground coffee particles (or a 1mm thick puck or whatever). Now add any tiny inconsistency like water droplets hitting differently or different densities or just random chance for the path the water takes first around the grounds. One of these inconsistencies already stretches over the entire thickness of the puck.
A thicker puck has a hundred of these layers and for each layer the inconsistencies are randomly rolled again. Together the inconsistencies cancel out and flow issues become less likely.

On the other hand one has to balance the fact that a thicker puck has a bigger gradient in the extraction between top and bottom.
Also, it provides more resistance so the grind has to be coarser. Once the grind is coarse enough to prevent channeling there isn't much benefit to grinding much coarser.

49mm doesn't run into these latter issues yet.
58mm makes it unnecessarily hard to get good shots.

I was looking at this earlier, an E&B Lab steel pourover dripper. It doesn't use any paper filters. Anyone used a dripper like this? How did it work? I don't mind some sediment in my cup if it causes that (I like french press coffee).

Semi lied btw. Looks like only the feld47 has the "kinu" burr, with the option for a "vmaccino(also made by italmill, dont know if its also the kinu PO) pourover burr". The cheaper ones only have a 38mm vmaccino. Can't tell you how they perform but Knock has been around for years.

I have a Chemex, and on occasion I will use my Kone metal filter. Likely you will enjoy a mesh/metal pour over filter if you are used to french press. ("Oily", "Thick""Mellow")
I also use reusable cotton filters, which I find as a somewhat midpoint between the unbleached papers and the Kone. Truth be told, you will really only want to use a mesh with pour over on larger batch sizes, as you will want a courser grind to avoid excessive sediment.
My favorite brew method is by far my siphon pot - old stovetop silex. Followed by "spooned and unpressed" french press - I will spoon off the fines and filter the rest through the plunger.

I enjoy having many different choices for how I brew, though the only one who can make the decision of what tastes best is you

what do you normally drink?

generally i would suggest finding a "local"(this could be anywhere in your country as long as the shipping is cheap and they roast to order/multiple times per week or you literally have one in your town/area that you can travel to in person and buy beans and that place has good quality specialty beans, usually found by searching "specialty coffee in (your location/state/country)") roaster and seeing if they have a cheap blend that has tasting notes such as "velvet/nutty/chocolate" etc.

i bought it from kofio, it has a different selection of coffees from Coffee Collective than their website, from coffee collective the price is a bit less, but there's money conversion from the danish krona to euro + their shipping rates to my country are absurdly expensive
even with that in mind i wholeheartedly recommend it, i haven't tried this specific selection, but their coffees never deluded me besides one one specific (after dropping the temperature a lot, it was good though)
they are mostly washed coffees that are really clean

yeah the decreased fine production and smaller size distribution (how close in size the grounds are to each other) will decrease drawdown time and would explain why it tastes lesser compared to the coffee youre used to. fines contribute a lot to flavor.
you can also use more pours, more agitation, or even thicker papers instead of grinding finer to get more out of the coffee. i mention this because grinding finer can sometimes cause astringency and other off flavors.
also i would recommend you try to make sure your filters are firmly pressed against the sides of the dripper, as the way its pulling away in the photo will encourage bypass.

Speaking of stuff in the air, sometimes I go running outside, and I've been thinking that everybody should have electric cars, because it would mean I don't have to breathe in exhaust fumes from traffic. But I guess you're right about tyres - little bits of rubber come off the tyres (and I guess there is brake dust too), which we must be breathing in. Still, electric cars would at least reduce the amount of shit in the air, compared to petrol/diesel cars.
