Pre-shred shreds are obnoxiously thick and are harder to evenly distribute and take more time to melt. Shredding at home lets you make delicately thin shreds that melt on command and can throughly cover a food (without going overboard). Also pre-shredded dries out because ALL THAT EXPOSED SURFACE AREA.

I bought some pre-shredded from Tannis restaurant supplier thinking it would be without the plastic coating and ok. It's stringier than what I normally get but it is also practically tasteless. Won't get again.
