sushi grade is not a regulated standard, it usually means that the salmon came from a farm. even then, you can deep freeze the fish for at least a week to reasonably kill all of the parasites that did exist in the fish. in fact, i would be more confident in homemade sushi because you know exactly the source and preparation of the fish to reduce the chance of getting sick

Most wild caught salmon have parasites, but farmed fish are perfectly clean as a result of modern farming practices. It's kinda like how pork was originally supposed to be super well done at all times but is now just fine to eat raw if you got it from a reputable source
